My first entry to NEC Cake International and what a fantastic surprise! I actually didn’t even check the results before collecting as thought there were such amazing entries within the wedding category that I didn’t stand a chance. You should have seen my face!! Very honoured and pleased! I might believe in myself a bit more next time…

I chose to do a Brazilian themed cake as we visited Brazil earlier in the year as part of our honeymoon and I just loved the flamboyance of the Samba queen costumes at the carnival, the celebration of beauty and colours! Most of the time my jaw was on the floor…So it had to be this theme! I wasn’t sure if this sort of design was bit too different and abstract for this competition but I enjoyed being carried away with it :-)

The bottom tier feather effect was made by airbrushing and sponge tool, the coloured gems were made using leaf gelatine and crown feathers made out of rice paper with scissors and shaped by steam from a kettle.
