This was created for a sweet lady’s 90th birthday. She needed a sugar-free cake so I used Swerve all natural sugar substitute. They have a granular version, as well as a confectioners sugar version. Sadly, no matter how much Swerve confectioners I used, the buttercream still remained slightly too thin (hence the “slippage” of the large crochet flower in the front), but it’s sugar-free and the birthday girl was able to eat it without ingesting chemical sugar substitutes, so that’s what is important.
The cake is a 3-layer 8-inch round Banana Cake with Vanilla Buttercream Frosting. I had a gorgeous Karen Davies crochet mold that I used for the fondant details (which are not sugar free, but she knew to remove the decorations prior to eating).
