For me, one of the best parts of my business is the opportunity to meet /interact with clients. When Gazelle contacted me regarding her 50th birthday cake, she had a clear vision of how she wanted her cake to look. As inspiration she also forwarded me a cake image. She wanted her love for flowers to be showcased by including a few of my gum paste open peonies. The colours for the tiers were chosen based on the colours being used for the theme of the party. The tiers were covered with hand-cut fondant and piped royal icing to look like lace. This was also my first try at making a turvy tiered cake!.
A day after the event, I received a phone call from Gazelle mentioning how much she loved the cake and how really happy she was with how it looked on the outside and the taste inside! “I simply had to touch the flowers to find out for myself if they were made with sugar”! she said.
The Cake: Both tiers moist white velvet cake layered with pecan praline Swiss butter cream and iced with Belgian white chocolate ganache.
