Made this cake for a relative who turned 50 and loves sports. It’s a sugar free pumpkin carrot cake with sugar free canned frosting. (Hated to frost my delicious carrot cake with canned frosting. But I have no idea how to make sugar free frosting! I suggested sugar free cream cheese frosting , but he does not like it.) The cap is made out of RKT; the bat, ball and balls on the side of cake are made with fondant.

very nice…a challenge making all sugar free. I have a recipe for icing, I’ll post it here for future reference. It calls for sugar twin, but I use stevia and cut amount by half.
