This was my competition entry to The Big Cake Show in Devon, in the UK. The theme was ‘the great south west’ and it had to be entirely edible – not even a cocktail stick was allowed!

I wanted to create something really sleek and modern with clean, sharp lines. I had also recently been to a mosaic craft evening in my village which I found really inspiring and I got to thinking that edible mosaics could be really beautiful on a cake.

I choose a few of my favourite aspects of the south west: camping & surfing in Cornwall, ex moor ponies, cute country cottages and glastonbury tor.

I am particularly pleased with my sharp edges which I achieved by using Torta Coutures ganaching method and the new Bellisimo smoothers from squires kitchen – amazing technique & products!!

My cake was certainly different to everyone else’s there – not everyone’s cup of tea as it’s not traditional but I’m really pleased with it. Hope you like it too! :-)
