This cake was made for a 7 year old with a very mature palate. She came in to order and for a tasting this Friday and was not keen on buttercream but loved the ganache. So I did a chocolate with chocolate ganache under fondant. I ususally don’t do fondant because most of my customers request buttercream. With our weather the ganche is a 7.5 to 1 ratio.
