piping chocolate

Hi everyone I am new here and a begginer to the world of cake decorating I am making a chocolate cake covered with chocolate and wanting to pipe a shell border around the top and bottom of the cake like you can with royal icing i have tried melting chocolate but it is too runny to pipe and won’t hold shape i thought maybe putting it into the fridge to harden a little would work but i have tried this today and it just went rock hard within a short time, do i need to make chocolate royal icing to this if there is such a thing i have not seen it or is there a way to thicken the cooking chocolate? someone did mention ganache but does this dry hard like royal icing or does it stay soft any help or advice would be very grateful thank you so much

Ganache will thicken as it cools, and will reach a nice piping consistency along the way.
It will not harden in the same way that royal icing does.

I agree with Julez…ganache is a good options or chocolate buttercream.

I wold like it to harden like royal icing does for making decoraions like fowers as well is there anything i can use for this or can i make chocolate royal icing using egg whites and cocoa powder

Hi Kim…. if you try adding cocoa powder to your royal icing, I’d love to know how it goes.
If it doesn’t work how you’d like, maybe try adding a dark brown gel paste colour?… although it would lack the chocolate flavour.
I agree with Amanda, you could use dark modelling chocolate, if you want to shape them.

great thank you for your answers I will try adding cocoa powder to my royal icing and let you know if it works if not I will look into the modelling chocolate idea.

You can use brown colour gel in your R I icing. Mixed 50/50 with buttercream icing…it will pipe beautifully and dry nicely.
