How to make marshmallow fondant (mmf)

Ingredients:

  • 1 – 16oz bag mini marshmallows
  • 1 – 2lb bag powdered sugar (sifted – I usually use about 3/4 to 2/3 of the bag)
  • 2 to 3TBS water
  • shortening
  • gel paste food coloring (if colored needed)
  • 1 to 2 tsp vanilla extract (optional)

Grease microwave safe bowl and spatula with shortening.

Add in 16 oz bag of mini marshmallows and about 2 to 3 TBS water. Coat marshmallows evenly with water mixture. I always start with 2TBS and add a little more if needed. Microwave for 1 minute. Mix and return to microwaving in 30 second intervals until marshmallows are melted.

I needed to make green fondant, so at this point you would color your melted marshmallows with gel paste food coloring of your choice. If using extract, add in at this point as well.

Grease kitchenaid bowl and dough hook with shortening. Add melted marshmallows and 3/4 of the bag of sifted powdered sugar to kitchenaid. (Place cover on top and a piece of saran wrap over the openings so sugar doesn’t go everywhere)

Start mixing on speed 1/2 until it starts to combine then go up to speed 3/4 until fondant is combined. This literally takes about 1 to 2 minutes to combine.

Check fondant to see if it’s too sticky or not. If it is, add a little more powdered sugar 1/4 cup at a time. Don’t over do it with the sugar.

Once done, you’ll have to knead it a bit in your hands or on the counter. You should be able to stretch it about 12” without it tearing. Should be almost a playdoh type texture. Once incorporated, roll in to a ball and coat lightly with shortening.

Double wrap in saran wrap. Let sit at least 1 hour before using, but overnight is better. When you go to use it and it’s too hard to work with, unwrap and put on a microwave safe plate and microwave about 7 to 10 seconds depending on amount of fondant.

*You can also make this without your kitchenaid. You would just add sugar in to bowl and knead until just combined. Turn mixture out on to generously greased counter top. Knead until well combined and then coat with shortening and double wrap in saran wrap. My KA is a 600 professional so it handles the fondant well. I can actually make 2 batches at once and it’s a total time saver. I make fondant in under 5 minutes total now this way. I sometimes also add in almond extract, but really you could use any extract of your choosing. Hope this is helpful! :)

This is the same recipe I use! The only difference is that I add a tsp or so of vanilla for extra flavor. And I do it by hand since I don’t have a stand mixer… One day though… I keep wishing and praying! :)

I do add vanilla or sometimes almond! Completely forgot to write that in! Will do so now. :)

Great recipe – I will try to make it using my mixer – I’d never done it before because it was so messy – this way the sugar is more contained – will definitely try it. Thanks!

Funfetti – It’s so much easier! Takes much less time. You still may need to knead it a bit after at first but once you get it down you won’t need to. :) Janicejake – Glad you found this helpful! I love cakesdecor! <3

Hello can I ask a silly question? I’m from Australia & I’ve never heard of Saran Wrap is that just a Glad wrap/plastic wrap you would use to wrap a sandwich??? Thank you
