VANILLA CUPCAKE RECIPE WANTED

Hi, everybody,

I just got a big order for vanilla cupcakes for a baby shower. I have a recipe, but I was wondering if anybody had a great recipe for vanilla cupcakes – I’ve been trying to get my foot in the door at this community and this is my big chance – so I want to wow them with my cupcakes.

I need to have them all baked by this Thursday – so your quick response would be appreciated!

Hi, Sunny Smiles, I made the cupcakes and the flavor is FANTASTIC – but for some reason, the cupcakes didn’t rise to a nice dome – I didn’t have self-rising flour so I added baking powder and salt to the all purpose flour I had on hand – perhaps that was the reason. I’m going to try them again tomorrow with the self-rising flour.

Hi Funfetti,

They bake pretty flat – even with SR flour they don’t have a very nice. I’ve only been able to get domed cupcakes with oil based recipes – like the hershey’s chocolate cake recipe. Never with butter or shortening based recipes :(. If I want them taller – I usually will just bake them using regular lineers but inside of the jumbo cupcake tins. That way they end up baking a little taller but still no dome.

This one was posted here awhile back and while I didn’t have vanilla beans on hand, I used vanilla extract and they were really good! Definitely would suggest these.

Hi guys! i know its a bit late but just registered and saw this post…. Funfetti and Caymancake problem with ‘’not rising’’ cupcakes could be sugar! Its always better to use caster sugar ! its actually vital in some recipes !x
my basic vanilla cupcakes will be based on weight of the eggs in shells
lets say 3 med eggs will be around 185 g
so i take 185 caster sugar +185 butter room temp all beat really good till light and fluffy!
add eggs, 2 tbsp milk(1tbsp per 100 g flour) 185 s-raising flower , 2 tsp vanilla extract (1tsp per 100 g flour) and 1/2 tsp baking powder (1/4 tsp per 1oo flour) all mix !
bake on 170-180C(fan oven) for 25 -30 min

I know this is way late but this is the vanilla recipes I always use for cupcakes. It always rises to a nice dome and only has 5 ingredients. This recipe will yield aprox 42 standard sized cupcakes.
430g of castor sugar
4 eggs
500mls thickened cream (the type you use for whipping)
2teaspoons of vanilla essence or vanilla bean paste
530g of self raising flour
Mix sugar, eggs, vanilla and cream by hand whith a whisk when well combined add sifted flour and mix by hand with whisk until combined.
That’s all there is to itI usually fill cases just over 1/2 way as it rises high
Cook at 180 degrees for aprox 18 minutes (i always turn the tray at 9mins for a nice even finish.)
Recipe may be halved and will then yield aprox 24.
