I made this cake last week for a lovely couple’s wedding.
The icing is a soft setting royal icing and the cakes are various combinations of neopolitan, so vanilla, raspberry and chocolate and the bottom tier was a layer of each of those flavours. Neopolitan is a flavour of ice-cream in New Zealand.
I had many issues during the week with the colour separating in the batter during baking. Then on the day I was very let down by the florist who didn’t have enough flowers or the right colour despite me communicating during the week
Despite all the issues I loved the finished look of this cake, rustic royal icing is not as easy as I thought when you only work with smooth fondant :)
