Blue Dahlia

Was very happy with the color combination And was happy with how my Dahlia came out.
This was a dairy free chocolate cake. The cake itself was good ( a King Arthur flor recipe). The ganache was 70% chocolate and coconut cream. It tasted fine, but never completely firmed up. Buttercream using anything but butter is awful. If anyone was a good dairy free buttercream, please share!

I’m surprised you’re ganache didn’t firm up. I’ve used coconut cream. Should be minimum 3:1 chocolate to liquid. You can actually use water to make ganache. And I use this recipe for butter free icing: https://www.gretchensveganbakery.com/aquafaba-swiss-buttercream-recipe/. I decrease the amount of shortening by half and add extra vegan butter sticks.
