I’m surprised you’re ganache didn’t firm up. I’ve used coconut cream. Should be minimum 3:1 chocolate to liquid. You can actually use water to make ganache. And I use this recipe for butter free icing: https://www.gretchensveganbakery.com/aquafaba-swiss-buttercream-recipe/. I decrease the amount of shortening by half and add extra vegan butter sticks.
