A sweet cake to celebrate another birthday for my sweet little girl! Layers of cherry sponge cake soaked with maraschino-amaretto syrup, hold together with amaretto flavored ganache and mascarpone mousse. Sides in ladyfinger biscuits. Topped with Montmorency cherries and whipped cream, dusted with cocoa.

Thanks The Garden Baker… I must say in my defense that I enjoy being a pastry chef! What I do not enjoy is not being able to share a piece of cake and a cup of tea with all of you sweet ladies… not fair!
