My next door neighbour and good friends son got married to his fiancée this past Friday. Big surprise to Mom and everyone else. Couple got engaged on New Year’s, but wanted to get married right away. Wedding was planned in 5 days!!! Of course being a cake decorator, I offered to make a wedding cake, as a surprise and a gift. Fastest cake I ever made…24 hrs. Was tied up until morning of the wedding. Groom has many intolerances, gluten, dairy and eggs. Cake was 6” gluten free lemon ginger, filled with crushed gluten free ginger snaps. Covered in vegan icing. Bottom tier is a dummy. Wanted to add some height to the cake. Fortunately, I had some previously made flowers saved I was able to use on the cake. B & G were surprised and happy with the cake, and everyone said cake tasted great. So mission accomplished!!
