This is my daughter’s birthday cake. She always declines a decorated cake for this one. It’s her favorite cake. A chocolate cake with a cheesecake layer sandwiched in between the chocolate layers, and cherries on top. The frosting is also a Hershey’s chocolate recipe.This cake was a bit of a challenge to bake being that I am in Ecuador, S.A. visiting my daughter. The altitude here In Quito is 9,000 feet (2743.2 Meters ). Never baked in high altitude before, so I googled it and found out that if I add an extra 1/4 cup of flour to the cake recipe, the cake won’t sink in the middle.
This is gorgeous and looks and sounds to die for! Congrats for overcoming the high altitude!

I’m back home and it’s bittersweet! Glad to be back because the altitude affects me, but sad because I had to say good-bye to my daughter.
