This is my daughter’s birthday cake. She always declines a decorated cake for this one. It’s her favorite cake. A chocolate cake with a cheesecake layer sandwiched in between the chocolate layers, and cherries on top. The frosting is also a Hershey’s chocolate recipe.This cake was a bit of a challenge to bake being that I am in Ecuador, S.A. visiting my daughter. The altitude here In Quito is 9,000 feet (2743.2 Meters ). Never baked in high altitude before, so I googled it and found out that if I add an extra 1/4 cup of flour to the cake recipe, the cake won’t sink in the middle.
