I don’t know how you all manage to make such beautiful work with fondant in the summer months. I had a terrible time with this one. Already noticed the day I made the fondant that the consistency seemed a little off. Of course the heat wave and high humidity did not help. Anyway this is for my great-niece’s graduation party on Sunday. bottom is chocolate cake filled with biscoff buttercream covered in ganache, middle is vanilla cake filled with alternate layers of caramelized peaches w/peach buttercream and raspberry reduction and raspberry buttercream. Top is rum cake, filled with pineapple curd and toasted coconut, covered in coconut rum buttercream. Fondant is homemade white chocolate marshmallow fondant. Was a little nervous with the school colors orange and black.

You did a great job, Goreti! Love the dental tools. I know exactly what you mean about humidity. Had to do a cake while in Jamaica once and the fondant practically melted into mush while I worked with it. I’ve heard the Massa (?) brand works best but haven’t tried it. I hope you’ll share any tips if anyone has a better option.
