Every year in my daughters birthday I put my self to the test for a cake more challenging than usual… This year we chose the theme to be American Indians and so I took the chance to make a standing horse cake for the first time. The horse is made with mud cake and chocolate ganache and of course some support inside and the teepee house next to it, to complete the servings needed for the party, is made with chocolate mud cake and Swiss meringue buttercream in two flavors: strawberries and orange.
I used modeling chocolate to cover the horse, modeling paste for the Indians on it, and fondant for the teepee house. All figures human and not were made with no use of molds.
