This is my first time out with Italian meringue buttercream and I have to say I completely underestimated the cost and work involved in making it. We are currently experiencing a warm spell in the South of the UK and my entire fridge has been given over to chilling this cake.
The base tier is a chocolate truffle with white chocolate buttercream. The middle is an almond sponge with morello cherry buttercream and the top tier is a lovely moist lemon with lemon curd buttercream (lemon curd doesn’t mix as well with meringue buttercream)!
