Cordelia is a Celtic name meaning “of the sea” This was a Sweet Sixteen birthday cake for a lovely young lady I have known since she was a baby. Her mom requested a mermaid cake but gave me total creative freedom beyond that. I really wanted her to have an elegant and ethereal style rather than a cute cartoonish look. She was sculpted from a 50/50 modeling chocolate fondant mix. It was the first time I tried sculpting a figure with it and I loved it! Also a first for me on the cake was the pretty watercolor effect I got using luster dusts as well as using a paneling technique to apply the fondant to the double barrel, BRILLIANT! Lots of firsts for me on this cake, so I am thrilled with how it came out.
