Surprise 70th birthday cake!

for my mom- my sister and I are flying home together to surprise my mom tomorrow, her birthday’s not til tuesday….. Im popping the cake in the freezer today (Friday), taking it on the plane tomorrow and then leaving it in the fridge til Tuesday. Hopefully itll be okay lol

it was my first time piping that kind of border with royal icing, it was meant to be on the top tier to, according to my original design, but Im tooooooo shaky and dont think it looks great. Pleased with the overall look tho- best thing about making a cake for your mom? Shell love it no matter what lol

Stunning cake. A word of warning about freezing though. I had to freeze and entire cake once and the trick (at least what I discovered) was to bring it back up to room temperature as slowly as possible to stop huge beads of condensation forming and wrecking it. You’ve got to hold your nerve though. The recipient of my cake never noticed it had been frozen and it actually probably tasted better because it was frozen. lol

thanks ladies- and Lizzie for your advice! Ive never actually frozen a decorated cake before, but because its just for us, Im not all that worried about it, if it flops it flops lol. Ive read to keep it in a cardboard box as this helps with the moisture issue? Not sure?
