Easter in my town of Adelaide in South Australia is during a beautiful time of the year – Autumn. Love this season because it is bright sunny days with a light breeze, sometimes showers and sometimes rainbows. My idea of Easter for Mr Bunny is a happy time full of love and colour, where if it rains it’s chocolatey neon and it tastes so good!
This is a double barrell chocolate fudge cake coated in black belgian chocolate ganache with a mosaic of fondant colourful squares and circles. The umbrella is fondant moulded and shaped to protect Mr Bunny from the shower of coloured white chocolate ganache. I tempered the chocolate, coloured it to the desired tone with lustre dusts and waited until it was almost set to be able to pour down the umbrella in a gravity defying effect but still be able to create drops that set just before they reached the cake surface. If I got it wrong I would have had to start all over again – luckily with careful attention it all worked out as I hoped. I spattered a few splodgey drops around Mr Bunny to add to the effect.
