I only had 10 days notice for this cake and the bride wanted a particular lace on the cake to match her dress (sort of). I’m not all that experienced with lace making and I had problems getting this particular pattern un-molded. It has a lot of un-detached areas of scroll work so I ended up doing a second layer leaving a very thin ‘backing’ on the lace and it worked fine. For the heck of it, I sent an e-mail to Sugar Delites and they responded right away with a solution. They said to use only half of the additive (Sugar Dress) to the mix and it will firm up enough for removal of the delicate areas. Live and Learn, Learn, Learn!!!
I can’t even believe they waited until 10 days before to order a cake for 164 guests. Then they called three days before delivery and ordered a double layer fruit and custard filled full sheet cake for serving, saying there was going to be 360 guests! The reception was being held at a very luxurious venue, too.
I delivered it in two pieces. The bottom being a 14" and a 10". Then a double barrel 8" with a 6" on top. Had to hold my breath while placing the top 3 tiers onto the bottom 2 tiers. Does anyone know of a tool that would simplify that task???
