I had been wanting to tackle a chevron cake for a while, but I have to admit, the design intimidated me. So I bought the chevron onlay mold, & had been wanting to try it.
My client gave me design freedom on this cake, just that it was for a man, black & white theme, & she wanted the name & 50 on it. So I thought the chevrons would be a perfect design for a masculine cake in graphic black & white. I had trouble with the onlay though, as it kept denting my cake & I couldn’t get the design to stick to save my life. So I ended up just using it as a glorified cutter, because I found that if I removed the fondant & let it stiffen a bit, I could apply it by hand very easily. I just eyeballed the design, but was happy with how it came out.
The cake is red velvet with white chocolate buttercream filling, dark chocolate ganache & fondant decor. Gumpaste topper.
