This cake has some backstory with it! My favorite college team (and where I went to school) is the University of Kansas whose mascot is the Jayhawk. I jumped at the chance to make a cake with my favorite mascot and incorporate another tradition from the school – waving the wheat. Kansas has a lot of wheat fields – it is so beautiful watching the wheat wave in the wind. At the end of every Kansas sports victory, the fans wave their arms – the whole stadium looks like a wheat field – so it’s called “waving the wheat.” Sooooo – now that you know a little of the backstory – this cake combined the Jayhawk on the belt buckle with the waving wheat on the top tier. The top tier is buttercream – piped with 2 different colors and the wheat stalks are made from gumpaste. The jeans and belt buckle are fondant. I love this cake – for many reasons!
