About 5 years ago I did a Lambeth method demonstration for our local cake club. This is a styrofoam dummy and bevel. After the class we had a drawing and one of the members got to take it home. It was the first time I had done Lambeth piping in many years. Not bad for 70 years old but I don’t think I could do some of the really fine piping today.

At last some piping work has showed up! I love working with royal icing. For me that is the real art of cake, no moulds, no cutters…. just a piping nozzle and a piping bag and let the artistry come alive…. Wonderful work, in Maltese we say PROSIT! (which means well done!)
