This is what I also call a “redemption” cake. This was for a very special client who, last year, received possibly the worst cake wreck from another bakery. After seeing what she asked for and what got, I encouraged her to contact me for her daughters cake this year. Well, she did, and I couldn’t have been more excited! Well, I could…because when she told me her theme was Minnie Mouse, I nearly squealed! I have done Mickey cakes and cupcakes…but have never gotten the chance to a Ms. Minnie Mouse cake! This is a mini cake. It’s a half height 8" round on the bottom with a 6" middle ruffled tier. I topped it with a 4" hand carved Mini Minnie Mouse hat with a little pink bow! I hand piped the name, after practicing a million times! lol. I loved everything about doing this cake, especially the look on their faces when I delivered it! Her faith in cake decorators has been restored!
