I entered this cake into the North Texas Cake Show and won my first ribbon!! I won second place and I’m super excited. This was my second show to enter. The cake was a collection of things I found on Pinterest as inspiration. The sea horses are two pieces of wafer paper carefully placed together with water. Then I luster dusted them with lemon extract. There is poured sugar for the coral that they are attached to. I thought the wafer paper lent to the delicate nature of seahorses. Then I used my extruder for the coral on top and the monogram B. The second tier has custom colored granulated sugar attached by Royal icing. The bottom tier has been encrusted with a bazillion dragees and sanding sugar all custom colored. The gems are all custom colored isomalt gems I made. The urchins on either side are made with styrofoam and wood skewers. I took the skewer and pushed it into my filled extruder then pushed them out with fondant attached. Then roll between your hands to smooth and taper. Use a tool to make the indent in the top. Also paint with luster dust. Hand sculpted shells and coral as well.
