So how do you get two land-dwelling princesses and a mermaid princess on to the same cake and make it look cohesive? That was the problem this client presented me with and the only answer I could think of was a castle with a moat! This cake was the result – a quadruple layer (6" tall) 8" chocolate cake layered with salted chocolate buttercream, with two chocolate and vanilla swiss roll turrets. Cinderella, Princess Aurora and the Little Mermaid were all modelled using sugarpaste with hand painted features. It was 100% edible. Happy Birthday Olivia!
