What can you do in 2hrs when you put your mind to it? Apparently, quite a lot!
This was another one of my entries for Food & Hotel Asia 2014, a biennial food and hospitality expo held in Singapore.

Rules:
Competitors have 2 hours to decorate 1 finished sponge cake, which competitors have to provide. All decorating ingredients must be edible, and mixed on the spot. Sugar can be cooked but not modeled. Sugar syrup is allowed. Chocolate and royal icing can be preprepared. There are no height restrictions to the finished piece. The cake (either plain, or with fillings) should be either round (30cm diameter) or a square (30cm x 30cm). Only 1 cake is allowed. Points will be deducted for non-compliance. All ingredients, utensils, implements etc. are to be provided by competitors.
This design was based off a design I had done before which was quite similar. I had to rework it so that I could complete it in 2hrs without the use of sticks or wires or any other non edible supports! This design was entirely carved from a single 12" Square cake.
I was awarded a Gold Medal.

2 Hrs that is insane, I must be the worlds slowest cake decorater that would take me a day or 2, but I do have 2 young kids. Amazing work!
