Last week I was asked to do a last minute cake for an impromptu ‘Welcome Home Party’. I’m not normally a name dropper, and I have pondered over this for a week now- if I say who the cake was for am I bragging, but if I don’t say who the cake was for will I offend them? So I flipped a coin! I have done many cakes now for this lovely family and they are some of the warmest and most humble people I have ever met (so much so, that I am thinking of asking to join!). Gold medal winner Lydia Lassila, recently added another bronze medal to her trophy cabinet and her mum asked if I had time to whip something up. So an ombre buttercream cake with some Olympic rings and bunting, was what I could do in the morning. A spiced white chocolate and date cake, and a white chocolate with raspberry swirl and chocolate ganache buttercream. Well done Lydia, your mum was so proud and over the moon to have you home safely.
