Each year I do a Christmas cake for my neighbour’s family. I asked her 9 year old what she would like to see on the cake this year and she said a tree. Her mum and nanny to her 3 young children sadly died suddenly this year. She collected teddy bears and this was my inspiration for the cake. Young Emily loved the idea and, fortunately, her mum did too so the cake was created to remember a much loved nanny at this special time of year. All of the teddies are free form. Cutters were used for the side of the cake to create a felt picture effect. The cake is rich fruit and the base for the tree is an RKT cone
