clear ice cubes for cake

Hi Guys. I was wondering does anyone have a recipe for how to make ‘ice cubes’ for around a bottle cake? I want them to be clear and i was going to flavour them with vodka. I do not have or want to use isomalt. im know to use gelatine but thats about it
Any help would be great

Hey Sweetlilly there was a thead a while ago that June gave a recipe how to make “glass” using sugar rather than isomalt or gelatin.

brilliant, thank you. one question. can i add vodka to this successfully so will that stop it setting properly? do i just add it as extra?

This mixture is very hot Sweetlily. One of the hints I’ve come across is to find a metal ice cube tray to pour the mixture in, well that’s near impossible…there from the 1950’s. I’d see if I could find a silicone ice cube tray, it can take the heat. A regular plastic tray might melt. I’ve seen silicone ice cube trays in my local $1 store. I poured my mixture on to a Silpat silicone mat. I don’t see why you couldn’t add a little vodka. That’s a good idea. If you want clear ice, you must use white corn syrup. Looking forward to seeing the cake….
