Hi all

I have a cake to do coming up which involves a lot of chocolate cigarellos and chocolate roses (both white and dark – with molding chocolate).

I haven’t done much work with chocolate to date, so if anyone has any pointers or words of advice I would be very appreciative. I’ve done a lot of research so far but thought I would check with all you talented people before I dive into giving it a go.

If you’ve never made roses from gumpaste or modeling chocolate, I highly recommend this three part tutorial. She uses gumpaste, but you do it the same with modeling chocolate. For me this is the easiest, fastest way to make them and I think the roses come out looking very organic. When you make them one petal at a time they tend to look spirally.

Thanks so much! That’s great news. I have made gumpaste roses before, and I make them using the cutters she uses in those videos – but everything I could find on making chocolate roses used circle cutters so I was concerned that the rose cutters wouldn’t work for chocolate. (I guess it makes sense that they would)

I’m also interested to know how far ahead they can be made? Do they keep well like gumpaste flowers?

Modeling chocolate will stay fresh for a couple weeks at least.

Thanks :) Yes if you google “nati’s cigarellos” there is a tutorial on Cake Central that shows how to make them. It’s sort of a cheat’s way and quite time consuming but so much easier than the proper way. If you have any questions about it let me know because it took me a while to get it right. I would post a tutorial here but it’s not my method to do with that with so I will just point you in the right direction. Hope that helps!
