CakesDecor Gazette: Issue 3.06 / June 2014

Hello my Lovelies,

What a special month it has been! An amazing group of people in Kate’s little home town of Benalla got together a ‘Shave for Kate’ fundraiser and with lots of hard work and bravery raised a whopping $14K!!

One of those amazing people was Kate’s wonderful neighbour Julie. She shaved her head and was a tireless worker in organising the event and coordinating all the prizes and participants.

So seeing Julie has inspired the Cake Community to have a similar event with some members of the Australian Cake Decorating Network have decided to shave their heads, some have agreed to colour….including myself!! Eeeeek!

Interview #24: Karla Chumpitaz of Sweet K

BIO

My name is Karla Chumpitaz, I’m 30 years old. I’m from Peru but I live Brescia (Italy) since 2008 and Sweet K is my business at the moment
I studied pastry in my country and after that I took a course of cake decorating that lasted one year.
Here in Italy I dedicate all my time to decorate and have classes especially in modeling that is what I like the most to do.

INTERVIEW

How did you first get started with cake decorating?

I’ve been always fascinated by pastry, my grandmother was a great baker! When I turned 15 I travelled to the United States for vacations and I had the opportunity to take a Wilton course just for fun…I guess that was the beginning of everything because I enjoy it so much!
After studying pastry in Peru I took a course of cake decorating but I continued my career as a pastry chef until 4 years ago I had to make a decorated cake and I didn’t leave it anymore

Paul Bradford Hosts an amazing American Crew!

Last month the fabulous Paul Bradford hosted an incredible line up of talented decorators from the US. Mayen Orido from Way Beyond Cakes by Mayen, Shawna McGreevy of McGreevy’s Cakes, Brenda Walton of Sugar High Inc and Rudy Martinez from Man Bake Cake all traveled to sunny Spain to film video tutorials for Paul and his team at Paul Bradford Sugarcraft School.

You can find lots of fabulous photos of their adventures on all their Facebook pages and I for one can’t wait to see what they have all filmed for us! :)

My Favorite Carrot Cake

This cake is super moist and so easy to make! I can make this recipe and have a perfectly finished cake and a spotless kitchen in 90 minutes!! Feel free to substitute walnuts for pecans, either is excellent.

Cake Ingredients
4 eggs
2 cups granulated sugar
1 1/4 cups vegetable oil
2 tsp pure vanilla extract
2 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt
3 cups grated carrots (see note 1)
1 cup chopped pecans or walnuts

What have I done wrong?

Can you help Dina?

Exactly the same cream cheese frosting recipe on both, one grainy, one perfectly smooth. Of course, the grainy one was the first one and I had to redo it and the second one was perfect. I don’t know what I have done wrong with the first one. The only difference is that I beat the cream cheese/butter faster when I added the sugar on the grainy one and slower on the perfect one. Is that what I have done wrong? Beating fast?
