This was a joint cake for two frie nods. One is the owner of a cafe overlooking a small harbour, the other is an Ormer farmer. I decided that to theme the cake around the harbour, the sea and various different shells which are easily found on our beaches. I made all of the shells, there’s cockle shells, a limpet shell, an oyster shell and of course there had to be an Ormer shell. Sourcing the Ormer shell was a little difficult. They are not currently in season and as the cake was a surprise I couldn’t get a shell from the farmer. However, luck was on my side and I found one in the shell draw at my daughter’s nursery. They kindly let me borrow it. The Ormer shell is truly a natural beauty. The inside of the shell is mother of pearl. Everything on this cake is edible.
