Lemon cake for a change – just added the zest and juice of a lemon to my usual Madeira recipe. Split into three layers, drizzled each layer with lemon syrup just in case it wasn’t lemony enough. Homemade buttercream using my outrageously expensive (but so worth it now I’ve tasted it) vanilla bean paste and a thick layer of lemon curd.
Covered in fondant with flowers made from ½ fondant, ½ Mexican paste. I picked up some cutter/veiner combos in TK Maxx for around half the price of elsewhere (which I feel justified buying more than one of). So easy to use, roll out icing, use cutter, stick the cutout between two wibbly bits of silicone and Bob’s yer uncle! A wee bit of dusting powder to give them some colour – any eejit could do it – I did!
