Easter cupcakes for hubby’s niece and nephew, since I realised last night with horror that I didn’t have any easter eggs for them.. oops! I only just got back from a trip yesterday, so wasn’t organised. I hope they’re suitably grossed out by them :-P

Mini vanilla buttermilk cupcakes with white chocolate buttercream, and a dollop of lemon curd for the yolk. The egg shells I made out of white chocolate.

I can’t believe I managed to pull these together on such short notice with no groceries in the house. I had ONE lemon on the tree to make the lemon curd out of, half a bag of white chocolate buttons for the shells, only JUST enough eggs, the exact amount of buttermilk in the freezer…. the cake Gods were on my side!
