This cake was truly a labor of love, as it was for my mother’s 75th birthday. I had known for months what I wanted to do. She has chickens, ducks, geese, etc……even hatching her own from her incubator. But she’s always loved peacocks & has never owned one.
I hand-cut all the feathers from gumpaste without using a pattern or cutter because I couldn’t find one I liked. The peacock is made from rice krispy treats & fondant. The inside of the cake is red velvet with a central layer of cheesecake, iced with white chocolate buttercream & covered with my own homemade marshmallow fondant. I had to laugh when my mother said that the ‘purple stuff’ was really delicious! I guess my fondant gets the thumbs up on taste! :-)

Christy, I sent my daughter the link to your cake because she is obsessed with everything peacock. Our last name translated from Portuguese to English is peacock. She just called me. She thinks it is one of the most gorgeous peacock cakes she has seen.
