Taking inspiration from British colonial heritage and the Caribbean tropics, we conjured up a triple-tiered Tahitian vanilla buttercake with lychee filling, smoothed with Earl Grey butter cream and covered in black-and-white fondant. The design reflects old English architecture, in particular the angular and circular designs of colonial-style grilles. The charming fondant orchids, Singapore’s national flower, are an additional tropical familiarity.
