The cake was a 6″ x 6″ chocolate cake with strawberry Italian meringue buttercream, iced with dark chocolate ganache and wrapped in chocolate fondant. For the design, Instead of traditional flowers, the couple wanted to incorporate their bird mascot and the Fall theme for the cake like they did for their invitation. ( The “original birds” are actually paper weights that the couple had bought. ) All the decorations including the leaves and the nest were made out of gumpaste. The cake topper birds were constructed using gumpaste, styrofoam for the core and the eyes are actually candy pearls that turned out to the be perfect size.
Each twig of the nest was made individually with an extruder, then cuts were made on each strand to look like twigs or else they would look like spaghetti! The nest was constructed in 3 layers, and each layer had to be dried before laying down the next, so in total, the making of the nest took approximately 3 days. I was happy with the result but my biggest mistake was not making a back-up nest. What was I thinking?!
Luckily, the nest and the cake made it to the wedding safe and sound.
