Buche de Noel  / Yule Log Christmas 2021

Turns out that 857 cookies isn’t enough baking for one non-traditional Christmas season! So I made a flourless chocolate cake by adapting the allrecipes version and a whipped cream filling, added cocoa powder to some vanilla American buttercream I already had (big time-saver), sugared cranberries and rosemary and there was no way I was fitting in making meringue mushrooms too. So I bought mini meringues I found in TJMaxx and added a fondant stem. Never made a roll before so that rolling part was a bit nerve-wracking! The cake was so light and it was just a small bit for everyone! It really might be my New Years Cake too!

For me, Christmas Eve is the bigger holiday because we are Italian. But the day prior the new Omicron infection rates had gone up so fast here in NY that P and I cancelled going to my sisters. I passed off all my cooked items and gifts to another sister and cried, even though it was the right thing to do. Some family are not even vaccinated and quite frankly we are not as young as we pretend to be!

To all my Cake Central Friends, Santa did not grant me access back to the site so sending all my sugary, floury, sprinkly hugs and warmest wishes for a Healthy Happy and Peaceful New Year!

Such a pretty Yule log cake. And I know so, so many friends whose Christmas were aborted by the omicron variant. Because husband is Polish, like you, being Italian, Christmas Eve is our big show. First time in 44 years we were by ourselves Christmas Eve.

Thank you June and Bethann and for the sweet sentiments! We can only look forward – not backwards! Which leads me to my next question - what are we going to eat next!! Don’t say salad – I am not ready for that until January 2 ;)
