An indulgent birthday present, and another opportunity for mother and daughter to team on a pastry challenge. One of my favorite combinations, raspberries and cream… with chocolate of course! Torte base on buttery and crunchy shortbread. The inside of the cake is made of a chocolate sponge roll, filled with raspberries-fresh cream filling. Topped with more cream and glazed with cocoa gelee. Decorated with chocolate cookie crumbs, fresh raspberries, silver and cocoa dust.
