Carrot Cake
This is my favorite carrot cake (recipe). It has everything but the kitchen sunk in it (lol)! It has carrots, raisins, pineapple, nuts, coconut, and a surprise ingredient: pumpkin. Frosted with cream cheese frosting. I usually make it for Thanksgiving celebration at my daughters house, but I didn’t make it last year because we didn’t have Thanksgiving at her house due to Covid-19!
