Last minute cake for my goddaughter’s 40Th Birthday. Although I am happy with the overall look, I am shaking my head at the topper. What the heck was I thinking? They are supposed to be cats and I wanted to make them realistic. What a laugh. I should have made cartoon like cats and leave realism for when I had more time to work on them. Oh well. Being that it is a surprise I think she will like it. This is rum cake filled with baked pineapple jam and toasted coconut covered in coconut SMBC and Marshmallow fondant.
