It’s so hard to believe. My son turned 30 this week. Certainly, I am not old enough to have a 30 year old son!
This cake was a challenge. I had to make it a week ahead of time and then have my daughter drive the cake 7 hours to my son’s house for the surprise party the following weekend!
I baked a 6" carrot cake, filled it with a buttercream white chocolate ganache mix (50/50) then iced the whole thing in white chocolate ganache and covered it with fondant. I figured this was the only way I could ensure freshness if the cake was kept refrigerated all week.
The quadcopter was made out of rice Krispie treats and then iced with white chocolate ganache and then covered with fondant.
I baked mini cakes in mason jars and kept them frozen until the day before the party. My daughter-in-law set up a "decorate your own cake’ station.
My son was blown away.
I was not able to attend the surprise party. A friend of ours asked me to make a wedding cake for his daughter. It turned out to be on the same dates. Our friend is on a list for a heart transplant so…. I baked the wedding cake and missed my son’s 30th birthday party because ….that’s what we cakers do sometimes.
