I’ve always wanted to make a woolly hat cake and I loved making this one . It’s hand carved sponge cake in a cherry bakewell flavour …. almonds and almond sponge , cherry compote and white chocolate ganache . For the knitted effect I used the cable knit mould by Karen Davies x
