One more year I moved up to the Confectionery Holguera in Madrid to produce this tart together with Tomás and his crew. This year I decided on my classic sponge cake of chocolate, landfill of cholate with milk callebaut to the orange and coverage of ganache white. The whole this tart finished with ganache painted to hand in his surface and it represents one of the principal scenes of the musical one with the incorporation of the Sun that is an element visually very importantly in the musical. All the figures of the scene have been recreated in silhouettes of chocolate by a few touches of painted to hand to stand out, except the principal ones that have been shaped in modelling chocolate painted with cocoa butter and the Sun that this finished also in ganache but it has a sheet of white tempered chocolate.
