I want to tell you a little story about this cake. I was very excited to do it, an enchanted forest/snow white themed cake. I mean who wouldn’t want to do it? right? but I did not count on a Hurricane hitting Orlando the day before the wedding. Until afew days before. I baked and froze the cakes earlier in the week, ganached them and I just needed to cover them in fondant and decorate them…right? I had the flowers already done. I had a generator incase we lost power. what I did not count on was with the loss of power, our generator decided to play up. The fridge light and cold was flickering and struggling. The ganached cakes began to get sticky. The ac was gone. The lights were gone. And the cake was due the NEXT day. The wind was howling. The venue could not be reached. The power remained out for 32 hours! 32 hours of humidity, sticky fondant, sticky cakes, no light, and not knowing if the venue would even get their power back…yes the venue lost power too! I borrowed an extra generator, window ac unit and began working on the cake again…ON THE WEDDING DAY! did this happen…yeah it really did….the house could not cool down enough and I drove the cake to the venue (which got power back) sticky…yes the cake was still sticky as you can tell by the photo. And the darned paint on the birch tiers ran while driving….oh this cake …I will never forget THIS cake! But it got there….and I am proud of that! I can most definately see the flaws as you can but it got there with half an hour to spare!!!

The cake is gorgeous and the color running just turned your birch into aspen, no biggie! Kadoos to you for keeping your composure during the hurricane and putting this beauty on the table for your bride!
