Not a cake exactly, but this is my contribution to a collaboration which celebrated The Ark’s 21st birthday in Dublin at the weekend. My cookie circus was my interpretation of one of their past workshops, Roll Up, Roll Up! All the cookies are hand cut and decorated with royal icing.
