This was my first attempt at a half and half wedding cake – working from a design supplied by the customer. It’s been incredibly hot here on the South Coast – we’re not used to it! – and I really struggled with the tuxedo strawberries, trying to find somewhere cool enough in the house for the melted chocolate to actually set :( Luckily the morning of the wedding was a bit cooler and I managed to get them to set.
